Olive and Parmesan Cheese Puffs
Salty with a touch of spice these delicious vegetarian cheese puffs can be made vegan

- 1/3 cup Parmesan (or vegan parmesan)
- 1/2 cup All-purpose flour
- 4 tbsp Butter or Earth Balance Vegan butter cold & cut into small pieces
- dash Cayenne pepper, ancho or chipotle ground pepper
- 1/4 tsp salt the olives are salty so you don't want too much added salt
- 25 Green olives stuffed with pimientos
Make the Dough: Cut the butter into small pieces and combine in a food processor with the flour, parmesan, pepper of choice and salt. When combined remove the flour mixture and shape into a ball. It should stick together but not be too doughy.
Roll the ball into a 1/4 inch sheet and cut into approximately 1 inch squares. Put one olive in the center of each square and wrap the dough around each olive leaving the pimento and some of the green olive showing through on one end.
Place individual olives on a plate or baking sheet and cover with plastic wrap. Refrigerate these until the dough becomes set, about 1 hour.
Bake the olive cheese puffs on a cookie sheet at 350 degrees for 15-20 minutes. When they are getting just slightly browned removed them from the oven. They are delicious warm or cool.
